Olive Oil
Alongside the vineyards, DeFratta tends ancient olive trees on Istria's red soil. Each autumn the olive harvest yields an oil of intense aroma, golden-green colour and the mild piquancy characteristic of the Istrian variety. The oil is extracted mechanically by cold pressing, preserving all polyphenols and fruit aromas. Each bottle carries the harvest year.

Extra Virgin Olive Oil
A carefully selected blend of several olive varieties creating a balanced and rich extra virgin olive oil.
Fresh fruitiness with notes of green olives and gentle herbal tones. Harmonious and rounded flavour with a pleasant balance of bitterness and piquancy. Smooth and lingering finish with a delicate freshness.

An autochthonous Istrian olive variety that yields an elegant and harmonious extra virgin olive oil.
Medium-intensity fruitiness with notes of freshly cut grass, green olive and hints of green almond. Harmonious and balanced flavour with moderate bitterness and piquancy and fresh herbal notes. Clean, medium-long aftertaste with a gentle peppery note and an almond finish.
